I really like those guys. Their emergency fill-in performance at ProgPower USA two years ago was just about as smooth and professional as could be, considering they had almost no time to prepare and assemble the band together. Very talented young band.
I'd put money on Blind Guardian. They were on the original and they're well loved around here. But which melodeath band could headline? Not a lot of options. Arch Enemy or In Flames maybe.

Melodeath - yes In Flames or Arch Enemy again fairly obvious choices. The buzz about The Halo Effect is probably enough for them to be considered, but they don't have enough material for a headline set yet (yes they COULD play old In Flames songs, but they said at the event I went to last night that they do not plan on playing In Flames stuff live at this point. I don't know that that's true, legally, at least. PR-wise, I don't know if Hansi or the rest of BG would want to do it. Without getting into politics, I don't know how that whole thing is seen in the rest of the world at this point in time. But I suspect that it's still too divisive a topic for any label to want to touch.
Legally, Schaffer isn't allowed to leave the United States and has given up his passport. I believe he's still awaiting sentencing, which prosecutors and his legal team were shooting for 3.5-4 years although it may be less with him cooperating with the feds. He's also asked to go into the witness protection program afterwards. The reason I said I thought he wasn't legally prohibited, is because I read somewhere that felons can go on cruises (IIRC, that start and end in the same place), depending on the destination and their laws. I'm sure there's more to it, but there's some leeway there. Hansi publicly did. From what I heard, Jon told him to, as well as the members of Iced Earth. He didn't want their careers to be hurt by his actions. That's from a friend of a friend, so it might be complete BS.

The witness protection thing was from an article I read back in the Spring, so something may have changed since then though I haven't seen any updates. By all accounts even with cooperation he's most likely going straight to jail once his sentencing does happen. At any rate, given the gravity of his crimes I highly doubt the US government would allow him to go out on a cruise that docks in another country. I hadn't heard about the witness protection bit. That would pretty much preclude him from ever playing live again. That's a shame.

That would be a long shot indeed, but having missed his "Evening With" performance here in Atlanta, I'd love to have a chance to see it. His autobiography is brilliant.
